I had the fortune of coming across a pineapple on sale and so quickly bought it, but then I wondered what to do with it. I thought about stuffing it with cooked veg and broth but then mum came up with the idea of putting a salad in it 😀
I immediately thought Gajar ka Achar! That is chilli carrot pickle/salad – it’s very simple and very moorish. There are also a lot of recipes for this simple mix but I had to make do with what I had and taking into account that mum doesn’t like things as chilli as I do (alas). The sweetness of the pineapple ofsets the chilli and makes a gorgeous fresh taste like pickle and eases digestion.
4 Green chillies
pinch of coriander seeds
1 flat tsp cayenne pepper
1 flat tsp turmeric
